= мезофилы[греч. mesos — средний, промежуточный и phileo — люблю; греч. mikros — маленький и лат. organismus — живое тело, живое существо]группа микробов, температурные границы роста которых находятся в пределах 20—45 °С (оптимальная температура 35—37 °С). Нижняя граница температуры покоя и смерти в зависимости от видовой принадлежности и формы существования начинается от 20 °С и простирается до глубоких минусовых температур. Верхняя граница зоны покоя начинается с 40—45 °С, а температура смерти у вегетативных форм большинства видов М.м. равна 60—70 °С при часовой экспозиции, у спор во влажной среде — 100—130 °С при получасовой экспозиции, в сухой среде — 180 °С также при получасовой экспозиции. М.м. обитают в организме теплокровных животных, в почве, воде и др. средах, содержащих достаточную влажность и питательные вещества в пределах своей температурной зоны роста. М.м. используются в различных биотехнологических процессах: в традиционных заквасках для кисломолочных продуктов, для биологической очистки сточных вод и др.Толковый биотехнологический словарь.
